The only downside of conferences is the fact that you are sitting for many many hours while eating a lot of cookies and sandwiches. 🙂
So when I came home tonight after two long conference days I immediately went for a run, followed by a quick grocery shopping.
Today’s recipe is the result. It’s really easy and quickly made. And…most important…absolutely tasty.
Ingredients:
- 2 plaice filets
- 1 cucumber
- 200 grams cherry tomatoes
- 100ml cream or cream cheese
- Lemon juice
- Oil
- Butter
- Salt/Pepper
Peel the cucumber, take out the watery middle part and cut slices.
Heat a bit of oil in a pan and fry the cucumbers until soft. Then add the halved tomatoes and when soft stir in the cream. Season with salt and pepper.
Season the fish filet with a bit of lemon juice and salt.
Heat up a bit of butter in another pan.
Fry the filets from both sides ( each 3-4 minutes) in the butter.
